fundamentals of food

i see food differently. i want people to feel the passion i put in every dish i made. i want people to be satisfied and contented for the money they paid. i dont want people to come and eat at my place and look for supper afterwards.

i totally lost my passion for food when i was working at the previous place. i did so many shitty stuffs that ended up in trash because the chef did not have a proper planning. the things they tried to introduce to the market is too good to be true. they only focused on foie gras. like really? foie gras is not new in this industry. all sorts of foie dishes are there in the market. they are promoting grass fed, grain fed, waygu, kobe and so on. but still they always under season, never go beyond salt n pepper.

i know am a newbie in this industry. but i know how to eat and i know what people would like. the chicken terrine the other day was a joke man..i wanted to laugh so hard. i know how things supposed to taste like.
i may not know how to use all those sousvide machines.but same things can be achieved using traditional way which requires less time.

it was a month long nightmare.

my definition of food, is not about trying a small bite that cost you a fortune because of the technologies used to produce it.
my definition of food is all about satisfying your taste bud and your tummy. i really appreciate food that has soul in it.where you can feel the sincerity of the cook.

and i've been holding to this : always respect food, and your food will come out good
